  • 4 medium zucchini
  • 2 cups cooked chicken (shredded)
  • 1 cup cherry tomatoes (diced)
  • 1/2 cup mozzarella cheese (shredded)
  • 1/4 cup fresh basil (chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic glaze
  • Salt and pepper (to taste)

Instructions

  • Preheat your oven to 375°F (190°C).
  • Slice the zucchini in half lengthwise and scoop out the seeds to create boats.
  • In a bowl, combine the shredded chicken, diced tomatoes, mozzarella cheese, basil, garlic, olive oil, and balsamic glaze. Mix well and season with salt and pepper.
  • Stuff the zucchini halves with the chicken mixture.
  • Place the stuffed zucchini on a baking sheet and bake for 25-30 minutes, or until the zucchini is tender and the cheese is bubbly.
