- 4 medium zucchini
- 2 cups cooked chicken (shredded)
- 1 cup cherry tomatoes (diced)
- 1/2 cup mozzarella cheese (shredded)
- 1/4 cup fresh basil (chopped)
- 2 cloves garlic (minced)
- 2 tablespoons olive oil
- 1 tablespoon balsamic glaze
- Salt and pepper (to taste)
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchini in half lengthwise and scoop out the seeds to create boats.
- In a bowl, combine the shredded chicken, diced tomatoes, mozzarella cheese, basil, garlic, olive oil, and balsamic glaze. Mix well and season with salt and pepper.
- Stuff the zucchini halves with the chicken mixture.
- Place the stuffed zucchini on a baking sheet and bake for 25-30 minutes, or until the zucchini is tender and the cheese is bubbly.
