- 4 boneless, skinless chicken breasts
- 3 cups cherry tomatoes, halved
- 1/2 cup fresh basil, chopped
- 3 cloves garlic, minced
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- Salt and pepper, to taste
- 1 cup mozzarella cheese, shredded
- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 400°F (200°C). This ensures your chicken cooks evenly.
- In a bowl, combine the cherry tomatoes, basil, garlic, balsamic vinegar, olive oil, salt, and pepper.
- Place the chicken breasts on a large sheet pan and drizzle with olive oil.
- Pour the bruschetta mixture over the chicken, making sure to cover each piece well.
- Bake in the preheated oven for 25 minutes.
- Remove the pan and sprinkle mozzarella cheese on top.
- Pop it back in for another 5-7 minutes until the cheese is bubbly and golden.
- Let it rest for a few minutes before serving.
