  • 3 cups cherry tomatoes, halved
  • 1/2 cup fresh basil, chopped
  • 3 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • Salt and pepper, to taste
  • 1 cup mozzarella cheese, shredded
  • 1 teaspoon Italian seasoning

Instructions

  • Preheat your oven to 400°F (200°C). This ensures your chicken cooks evenly.
  • In a bowl, combine the cherry tomatoes, basil, garlic, balsamic vinegar, olive oil, salt, and pepper.
  • Place the chicken breasts on a large sheet pan and drizzle with olive oil.
  • Pour the bruschetta mixture over the chicken, making sure to cover each piece well.
  • Bake in the preheated oven for 25 minutes.
  • Remove the pan and sprinkle mozzarella cheese on top.
  • Pop it back in for another 5-7 minutes until the cheese is bubbly and golden.
  • Let it rest for a few minutes before serving.
