  • 2 large flour tortillas
  • 1 cup cooked chicken (shredded)
  • 4 slices bacon (cooked and crumbled)
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced bell peppers (optional)
  • 1/4 cup diced onions (optional)
  • to taste salt
  • to taste pepper
  • 1 tablespoon olive oil or butter (for cooking)
  • to taste salsa or hot sauce (for serving, optional)

Instructions

  • Begin by cooking the bacon in a skillet over medium heat until it’s crispy. Remove the bacon and set it aside on a paper towel to drain excess fat.
  • In the same skillet, add olive oil or butter. Sauté the diced onions and bell peppers until they’re soft, about 3-4 minutes.
  • Crack the eggs into a bowl, whisk them together, and pour them into the skillet. Season with salt and pepper. Cook until the eggs are scrambled and fluffy, about 3-5 minutes.
  • Once the eggs are cooked, add the shredded chicken and crumbled bacon to the skillet. Mix everything together until heated through.
  • Warm the tortillas in a separate pan for about 30 seconds on each side, or until they’re soft and pliable.
  • To assemble, place a portion of the egg, chicken, and bacon mixture in the center of each tortilla. Sprinkle with cheddar cheese.
  • Fold in the sides of the tortilla and then roll it up from the bottom to enclose the filling completely.
  • For extra crispiness, place the burrito seam-side down in the skillet for an additional 2 minutes. This helps seal the burrito.
  • Serve hot with salsa or hot sauce if desired.
