- 1 cup pumpkin puree ((canned or fresh))
- 1/2 cup maple syrup
- 1/2 cup brown sugar ((packed))
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter ((softened))
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup chopped nuts or chocolate chips ((optional))
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add in the pumpkin puree, maple syrup, and vanilla extract. Mix until well combined.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are lightly golden. Let them sit on the baking sheet for a few minutes before transferring to a wire rack.
