  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (optional)
  • 2 cups cherry vanilla ice cream

Instructions

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients until just combined.
  • If you're using chocolate chips, fold them in now.
  • Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden.
  • Once baked, let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Once cooled, scoop a generous amount of cherry vanilla ice cream onto the flat side of one cookie. Top with another cookie and gently press down to create your sandwich. Repeat for the remaining cookies.
  • For a firmer sandwich, place them in the freezer for at least 30 minutes before serving. Enjoy!
