- 2 cups mascarpone cheese
- 1 cup heavy cream
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup brewed espresso or strong coffee, cooled
- 1/2 cup amaretto liqueur
- 1 cup fresh cherries, pitted and halved
- 24 ladyfinger cookies
- Cocoa powder for dusting
Instructions
- Wash, pit, and halve the cherries; mix with sugar and let sit for 10 minutes.
- Beat heavy cream to soft peaks, add powdered sugar and vanilla, then fold into smooth mascarpone.
- Mix brewed espresso and amaretto in a shallow dish.
- Dip ladyfingers in the coffee mixture and layer them in a dish; spread half of the mascarpone mixture and cherries on top.
- Repeat with another layer of ladyfingers, mascarpone, and cherries; smooth the top.
- Cover and refrigerate for at least 4 hours or overnight.

- For a stronger coffee flavor, use a robust espresso.
- Chilling overnight enhances the flavors.
