- 1 pound pasta ((rotini or penne preferred))
- 1 pound ground beef ((or turkey))
- 1 packet taco seasoning
- 1 cup cherry tomatoes (halved)
- 1 cup corn ((canned or frozen))
- 1 cup black beans (rinsed and drained)
- 1 cup shredded cheese ((cheddar or Mexican blend))
- 1/2 cup diced red onion
- 1/2 cup sour cream ((or Greek yogurt))
- 1/4 cup mayonnaise
- 2 tablespoons lime juice
- Salt and pepper (to taste)
- Fresh cilantro (for garnish (optional))
Instructions
- Cook the pasta according to package directions until al dente.
- In a skillet, brown the ground beef over medium heat and drain excess grease.
- Add taco seasoning and 1/4 cup water to the beef, simmer for 5 minutes.
- In a large bowl, combine cooked pasta, beef, cherry tomatoes, corn, black beans, cheese, and red onion.
- In a small bowl, whisk together sour cream, mayonnaise, lime juice, salt, and pepper.
- Pour dressing over the pasta mixture and toss to combine.
- Cover and refrigerate for at least 30 minutes before serving.
- Garnish with fresh cilantro if desired.
