  • 1 pound pasta ((rotini or penne preferred))
  • 1 pound ground beef ((or turkey))
  • 1 packet taco seasoning
  • 1 cup cherry tomatoes (halved)
  • 1 cup corn ((canned or frozen))
  • 1 cup black beans (rinsed and drained)
  • 1 cup shredded cheese ((cheddar or Mexican blend))
  • 1/2 cup diced red onion
  • 1/2 cup sour cream ((or Greek yogurt))
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • Salt and pepper (to taste)
  • Fresh cilantro (for garnish (optional))

Instructions

  • Cook the pasta according to package directions until al dente.
  • In a skillet, brown the ground beef over medium heat and drain excess grease.
  • Add taco seasoning and 1/4 cup water to the beef, simmer for 5 minutes.
  • In a large bowl, combine cooked pasta, beef, cherry tomatoes, corn, black beans, cheese, and red onion.
  • In a small bowl, whisk together sour cream, mayonnaise, lime juice, salt, and pepper.
  • Pour dressing over the pasta mixture and toss to combine.
  • Cover and refrigerate for at least 30 minutes before serving.
  • Garnish with fresh cilantro if desired.
