  • 4 pieces boneless, skinless chicken breasts
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh spinach, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs (optional)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix the cream cheese, mozzarella cheese, Parmesan cheese, chopped spinach, garlic powder, Italian seasoning, salt, and pepper until well combined.
  • Using a sharp knife, carefully cut a pocket in each chicken breast. Make sure not to cut all the way through.
  • Stuff each chicken breast with the cheese mixture. If you want extra crunch, dip the stuffed chicken in breadcrumbs.
  • Heat olive oil in a skillet over medium heat. Sear the chicken breasts for about 3-4 minutes on each side until golden brown.
  • Transfer the seared chicken to a baking dish and bake for 20-25 minutes or until the chicken is cooked through (internal temp of 165°F or 75°C).
  • Let it rest for a few minutes before slicing. Serve warm and enjoy!
