- 4 large bell peppers
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1 can diced tomatoes, drained
- 1 cup shredded cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- to taste Salt and pepper
- 2 tbsp olive oil
- optional Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the onions and sauté until soft, about 3-4 minutes.
- Add the garlic and ground meat to the skillet. Cook until browned, breaking it up with a spoon.
- Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well and remove from heat.
- Cut the tops off the bell peppers and remove the seeds. Place the peppers upright in a baking dish.
- Fill each bell pepper with the meat and rice mixture, packing it in tightly.
- Top each filled pepper with shredded cheese.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove foil and bake for another 10 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh parsley and serve hot!
