  • 4 large bell peppers
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1 can diced tomatoes, drained
  • 1 cup shredded cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • to taste Salt and pepper
  • 2 tbsp olive oil
  • optional Fresh parsley for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat. Add the onions and sauté until soft, about 3-4 minutes.
  • Add the garlic and ground meat to the skillet. Cook until browned, breaking it up with a spoon.
  • Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well and remove from heat.
  • Cut the tops off the bell peppers and remove the seeds. Place the peppers upright in a baking dish.
  • Fill each bell pepper with the meat and rice mixture, packing it in tightly.
  • Top each filled pepper with shredded cheese.
  • Cover the baking dish with foil and bake for 25 minutes.
  • Remove foil and bake for another 10 minutes, or until the cheese is bubbly and golden.
  • Garnish with fresh parsley and serve hot!
