  • 4 pieces boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • drizzle Olive oil for drizzling
  • 1/2 cup marinara sauce, for serving

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine chopped spinach, ricotta, mozzarella, Parmesan, minced garlic, Italian seasoning, salt, and pepper. Stir until well combined.
  • Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness (about 1/2 inch). This makes rolling them easier!
  • Spread a generous amount of the spinach and cheese mixture over each chicken breast, leaving a little space at the edges.
  • Roll the chicken tightly, starting from one end. Secure each roll with toothpicks or kitchen twine.
  • In a large oven-safe skillet, heat a drizzle of olive oil over medium heat. Sear the chicken rolls for 4-5 minutes on each side until golden brown.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (165°F internal temperature).
  • Remove the toothpicks and serve the rolls warm with marinara sauce drizzled on top. Enjoy!
