  • 4 pieces boneless, skinless chicken breasts
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • Olive oil for cooking
  • toothpicks or kitchen twine for securing

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a bowl, combine chopped spinach, cream cheese, mozzarella, Parmesan, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Take each chicken breast and create a pocket by slicing it horizontally, being careful not to cut all the way through.
  • Stuff each chicken breast with the spinach and cheese mixture, using toothpicks or kitchen twine to secure it if needed.
  • Heat olive oil in a skillet over medium-high heat. Sear each stuffed chicken breast for about 3-4 minutes on each side until golden brown.
  • Transfer the chicken breasts to a baking dish and bake for 20-25 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
  • Let rest for 5 minutes before serving. Enjoy!
