- 2 pounds baby potatoes (halved)
- 1/2 cup bacon (chopped (about 4-5 slices))
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese (softened)
- 5 cloves garlic (minced)
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried rosemary (optional)
- Chopped green onions (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the halved baby potatoes, olive oil, salt, and pepper. Toss until evenly coated.
- Spread the potatoes on a baking sheet in a single layer. Roast them for about 25-30 minutes or until golden brown, stirring halfway through.
- While the potatoes are roasting, cook the chopped bacon in a skillet over medium heat until crispy. Remove and set aside, leaving the drippings in the pan.
- Add minced garlic to the skillet and sauté for about 1-2 minutes until fragrant.
- In a large mixing bowl, combine the roasted potatoes, cooked bacon, garlic, and half of the cheddar cheese. Stir until well mixed.
- Transfer the mixture back to the baking sheet and sprinkle the remaining cheddar cheese on top.
- Return to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Garnish with chopped green onions before serving. Enjoy!
