- 4 medium potatoes (peeled and cubed)
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup sour cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper (to taste)
- 4 large flour tortillas
- 1 tablespoon olive oil (for frying)
Instructions
- Start by boiling the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and mash them in a bowl.
- Add the shredded cheese, sour cream, garlic powder, onion powder, salt, and pepper to the mashed potatoes. Mix until smooth and creamy.
- Heat a skillet over medium heat and add a bit of olive oil. Place a tortilla on the skillet.
- Spoon about 1/4 of the potato mixture into the center of the tortilla. Fold the sides over and roll it up tightly.
- Fry the burrito seam-side down for about 2-3 minutes until golden brown, then flip and cook the other side. Repeat with the remaining tortillas.
- Slice in half and serve warm with your favorite dipping sauce or salsa.
