  • 3 cups leftover mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped green onions (optional)
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • to taste Salt
  • to taste Pepper
  • as needed Oil for frying or cooking spray for baking

Instructions

  • Preheat your oven to 400°F (200°C) if you’re baking. If frying, heat oil in a large skillet over medium heat.
  • In a large bowl, combine the leftover mashed potatoes, cheddar cheese, Parmesan cheese, and green onions.
  • Add in the eggs, flour, garlic powder, salt, and pepper. Mix until well combined.
  • Using your hands, form the mixture into small balls, about the size of a golf ball.
  • If baking, place the balls on a greased baking sheet and spray the tops with cooking spray. Bake for 20-25 minutes or until golden brown.
  • If frying, carefully add the balls into the hot oil, cooking until they are golden and crispy on all sides, about 4-5 minutes per batch. Remove and drain on paper towels.
  • Serve warm and enjoy your delicious cheesy puffs!
