  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  • Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Season with salt, pepper, paprika, and Italian seasoning.
  • Stir in the rice, mixing it well with the beef and onion mixture.
  • Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 20 minutes, or until the rice is cooked and liquid is absorbed.
  • Once the rice is cooked, stir in the frozen mixed vegetables, then sprinkle the shredded cheddar cheese on top. Cover again and let it sit for a few minutes until the cheese melts.
  • Give it a good stir, taste, and adjust seasonings if necessary. Serve hot and enjoy your cheesy creation!
