Gather these delicious ingredients to create your Cheesy Chicken Quesadilla Bake:
- 2 cups cooked chicken, shredded
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 8 small flour tortillas
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup corn (fresh or frozen)
- 1 teaspoon taco seasoning
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Chopped cilantro for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix shredded chicken, diced tomatoes, corn, taco seasoning, salt, and pepper.
- In a greased baking dish, layer 4 tortillas, half the chicken mixture, and half the cheese; repeat.
- Cover with foil and bake for 20 minutes, then uncover and bake for another 5-10 minutes.
- Garnish with cilantro, cool slightly, slice, and serve.
