Ingredients

  • 2 cups cheese tortellini
  • 1 can (10 oz) enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Cook onions in olive oil until translucent, then add ground beef and brown it.
  2. Stir in garlic, then add enchilada sauce, black beans, and corn; simmer for 5 minutes.
  3. Boil salted water, cook tortellini according to package instructions, then drain.
  4. Combine tortellini with the beef mixture, transfer to a baking dish, top with cheese, and bake at 350°F for 15 minutes.
  5. Let sit, garnish with cilantro, and serve.
