- 1 pound ground beef
- 2 cups cheese tortellini
- 1 can (10 oz) enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Cook onions in olive oil until translucent, then add ground beef and brown it.
- Stir in garlic, then add enchilada sauce, black beans, and corn; simmer for 5 minutes.
- Boil salted water, cook tortellini according to package instructions, then drain.
- Combine tortellini with the beef mixture, transfer to a baking dish, top with cheese, and bake at 350°F for 15 minutes.
- Let sit, garnish with cilantro, and serve.
