A comforting and cheesy beef enchilada bake that’s perfect for family dinners!

  • 1 pound ground beef
  • 1 can (15 oz) enchilada sauce
  • 8 corn tortillas corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup diced onion
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnishing (optional)

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  • Add the diced onion, cumin, garlic powder, salt, and pepper to the beef. Cook until the onions are translucent, about 3-4 minutes.
  • Stir in the black beans and half of the enchilada sauce. Mix well and let it simmer for about 5 minutes.
  • In a 9×13 inch baking dish, spread a thin layer of enchilada sauce on the bottom.
  • Layer four corn tortillas over the sauce, followed by half of the beef mixture and a cup of cheese.
  • Repeat the layers, finishing with tortillas, the remaining enchilada sauce, and the rest of the cheese on top.
  • Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and lightly golden.
  • Let it cool for a few minutes before slicing. Garnish with fresh cilantro if desired!
