- 1 pound ground beef
- 1 can (15 oz) enchilada sauce
- 8 corn tortillas corn tortillas
- 2 cups shredded cheddar cheese
- 1 cup diced onion
- 1 can (15 oz) black beans, drained and rinsed
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnishing (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Add the diced onion, cumin, garlic powder, salt, and pepper to the beef. Cook until the onions are translucent, about 3-4 minutes.
- Stir in the black beans and half of the enchilada sauce. Mix well and let it simmer for about 5 minutes.
- In a 9×13 inch baking dish, spread a thin layer of enchilada sauce on the bottom.
- Layer four corn tortillas over the sauce, followed by half of the beef mixture and a cup of cheese.
- Repeat the layers, finishing with tortillas, the remaining enchilada sauce, and the rest of the cheese on top.
- Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and lightly golden.
- Let it cool for a few minutes before slicing. Garnish with fresh cilantro if desired!
