- 2 pounds baby potatoes (halved)
- 1 cup shredded cheddar cheese
- 1 cup crumbled bacon (about 8 slices)
- 1 packet ranch seasoning mix
- 1/2 cup sour cream (or Greek yogurt for lighter option)
- 2 tablespoons olive oil
- Salt and pepper (to taste)
- Chopped chives or green onions (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). This ensures a crispy finish on the potatoes.
- In a large bowl, toss the halved potatoes with olive oil, ranch seasoning, salt, and pepper until well coated.
- Spread the potatoes evenly on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until they are golden brown and fork-tender.
- Once the potatoes are done, remove them from the oven and sprinkle the shredded cheddar cheese and crumbled bacon on top.
- Return the baking sheet to the oven for an additional 5-10 minutes, until the cheese is melted and bubbly.
- Drizzle with sour cream and garnish with chopped chives or green onions before serving.
