A delicious and easy side dish featuring crispy potatoes, gooey cheese, and savory bacon, all tossed in ranch seasoning.

  • Total Time: 40

Ingredients

Scale
  • 2 pounds baby potatoes (halved)
  • 1 cup shredded cheddar cheese
  • 1 cup crumbled bacon (about 8 slices)
  • 1 packet ranch seasoning mix
  • 1/2 cup sour cream (or Greek yogurt for lighter option)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • Chopped chives or green onions (for garnish)

Instructions

  • Preheat your oven to 400°F (200°C). This ensures a crispy finish on the potatoes.
  • In a large bowl, toss the halved potatoes with olive oil, ranch seasoning, salt, and pepper until well coated.
  • Spread the potatoes evenly on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until they are golden brown and fork-tender.
  • Once the potatoes are done, remove them from the oven and sprinkle the shredded cheddar cheese and crumbled bacon on top.
  • Return the baking sheet to the oven for an additional 5-10 minutes, until the cheese is melted and bubbly.
  • Drizzle with sour cream and garnish with chopped chives or green onions before serving.
