- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons cream of tartar

- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract (for cheesecake filling)
Instructions
- Preheat oven to 350°F (175°C). Cream butter, granulated sugar, and brown sugar until fluffy.
- Add eggs one at a time, mixing well, then stir in vanilla extract.
- Whisk flour, cream of tartar, baking soda, salt, and cinnamon in a separate bowl; gradually add to wet mix.
- Beat cream cheese, powdered sugar, and vanilla extract until smooth for the filling.
- Flatten a tablespoon of dough, place a teaspoon of filling, fold and roll into a ball.
- Mix sugar and cinnamon; roll each cookie in the mixture before placing on a baking sheet.
- Bake for 12-15 minutes until edges are golden.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
- For a chewier texture, do not overbake the cookies.
- Store cookies in an airtight container to maintain freshness.
