  • 1 cup packed brown sugar

  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for cheesecake filling)

Instructions

  1. Preheat oven to 350°F (175°C). Cream butter, granulated sugar, and brown sugar until fluffy.
  2. Add eggs one at a time, mixing well, then stir in vanilla extract.
  3. Whisk flour, cream of tartar, baking soda, salt, and cinnamon in a separate bowl; gradually add to wet mix.
  4. Beat cream cheese, powdered sugar, and vanilla extract until smooth for the filling.
  5. Flatten a tablespoon of dough, place a teaspoon of filling, fold and roll into a ball.
  6. Mix sugar and cinnamon; roll each cookie in the mixture before placing on a baking sheet.
  7. Bake for 12-15 minutes until edges are golden.
  8. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
