- 1 lb ground beef (or turkey for a lighter option)
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 3 cups beef broth
- 2 cups diced potatoes
- 1 cup carrots (diced)
- 1 cup celery (diced)
- 1 cup shredded cheddar cheese
- 1 cup milk (or cream)
- 2 tablespoons Worcestershire sauce
- 1 teaspoon mustard
- to taste Salt and pepper
- for garnish Chopped green onions
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add the diced onion and garlic, cooking until the onion is translucent.
- Stir in the beef broth, diced potatoes, carrots, and celery. Bring to a boil.
- Reduce heat and simmer for about 15-20 minutes until the vegetables are tender.
- Stir in the Worcestershire sauce, mustard, milk, and cheese until melted and creamy.
- Season with salt and pepper to taste. Serve hot, garnished with green onions.
