  • 1 lb ground beef (or turkey for a lighter option)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 3 cups beef broth
  • 2 cups diced potatoes
  • 1 cup carrots (diced)
  • 1 cup celery (diced)
  • 1 cup shredded cheddar cheese
  • 1 cup milk (or cream)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon mustard
  • to taste Salt and pepper
  • for garnish Chopped green onions

Instructions

  • In a large pot, brown the ground beef over medium heat. Drain excess fat.
  • Add the diced onion and garlic, cooking until the onion is translucent.
  • Stir in the beef broth, diced potatoes, carrots, and celery. Bring to a boil.
  • Reduce heat and simmer for about 15-20 minutes until the vegetables are tender.
  • Stir in the Worcestershire sauce, mustard, milk, and cheese until melted and creamy.
  • Season with salt and pepper to taste. Serve hot, garnished with green onions.
