- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon salt
- 4 large eggs
- 1 cup vegetable oil
- 3 cups grated carrots (about 4-5 medium carrots)
- 1 cup crushed pineapple, drained
- 1 cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×13 inch baking pan or line with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, beat eggs and mix with vegetable oil, then combine with dry ingredients.
- Fold in grated carrots, crushed pineapple, and nuts if using.
- Pour batter into the pan and bake for 30-35 minutes until a toothpick comes out clean.
- Cool for 15 minutes, then cut into bars.
