  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon

  • ½ teaspoon salt
  • 4 large eggs
  • 1 cup vegetable oil
  • 3 cups grated carrots (about 45 medium carrots)
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan or line with parchment paper.
  3. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, beat eggs and mix with vegetable oil, then combine with dry ingredients.
  5. Fold in grated carrots, crushed pineapple, and nuts if using.
