  • 12 ounces fettuccine
  • 2 large onions, thinly sliced
  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped (optional)
  • Extra Parmesan for serving

Instructions

  • Start by cooking the fettuccine according to package instructions in a large pot of salted boiling water. You want it al dente! Drain and reserve about 1 cup of the pasta water.
  • While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the sliced onions and salt. Stir occasionally, letting the onions cook until they become golden brown and caramelized, about 15-20 minutes.
  • Once the onions are caramelized, add the minced garlic. Stir for about 1-2 minutes until fragrant.
  • Add the cooked fettuccine to the skillet along with the reserved pasta water, black pepper, and grated Parmesan. Toss everything together until the pasta is well coated. If you need extra creaminess, add a little more pasta water.
  • Remove from heat, sprinkle with fresh parsley if desired, and serve with additional Parmesan on top. Enjoy!
