- 1 lb chicken breasts, diced
- 2 cups rice, uncooked (use jasmine or basmati for best results)
- 2 large onions, thinly sliced
- 4 cups chicken broth
- 1 cup cheese, shredded (cheddar or mozzarella works well)
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp thyme (dried or fresh)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add sliced onions. Cook until they are caramelized, about 15-20 minutes, stirring occasionally.
- While onions caramelize, season the diced chicken with salt, pepper, garlic powder, and thyme.
- In a baking dish, layer the uncooked rice evenly at the bottom. Pour the chicken broth over the rice.
- Add the caramelized onions on top of the rice, followed by the seasoned chicken.
- Cover the dish with foil and bake for 30 minutes. Then, remove the foil, add the shredded cheese, and bake for an additional 10 minutes until the chicken is cooked through.
- Let it sit for a few minutes before serving. Enjoy your meal!
