  • 1 pre-made tart shell (9-inch)
  • 4 ripe bananas sliced
  • 1 cup granulated sugar
  • 2 tablespoons butter
  • 2 cups heavy cream
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, melt the butter and add the sliced bananas along with the sugar. Stir gently until the bananas are golden and caramelized, about 5-7 minutes. Remove from heat and set aside.
  • In a saucepan, heat the heavy cream until it’s just about to boil. Remove from heat.
  • In a bowl, whisk the egg yolks, cornstarch, vanilla extract, and salt until smooth. Gradually add the hot cream to the egg mixture, whisking constantly to prevent curdling.
  • Pour the mixture back into the saucepan and cook over medium heat, stirring constantly until it thickens, about 5-8 minutes.
  • Remove the custard from heat and pour it into the pre-baked tart shell. Top with the caramelized bananas.
  • Bake the tart in the oven for 15-20 minutes until the custard is set but still slightly jiggly in the center.
  • Let cool before serving. Enjoy!
