- 1 cup caramel popcorn
- 1 cup vanilla ice cream
- 2 cups all-purpose flour
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the caramel popcorn, ensuring it’s evenly distributed throughout the batter.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper, spacing them about two inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let them cool on a wire rack.
- Once the cookies are cooled, scoop a generous amount of ice cream onto the flat side of one cookie. Top with another cookie, pressing down gently to create a sandwich.
- Repeat this process until you’ve made all your sandwiches. Enjoy right away or freeze for later!
