  • 1 cup vanilla ice cream
  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the caramel popcorn, ensuring it’s evenly distributed throughout the batter.
  • Drop spoonfuls of the dough onto a baking sheet lined with parchment paper, spacing them about two inches apart.
  • Bake for 10-12 minutes, or until the edges are golden brown. Remove from the oven and let them cool on a wire rack.
  • Once the cookies are cooled, scoop a generous amount of ice cream onto the flat side of one cookie. Top with another cookie, pressing down gently to create a sandwich.
  • Repeat this process until you’ve made all your sandwiches. Enjoy right away or freeze for later!
