- 1 pre-made chocolate cookie pie crust
- 2 cups coffee ice cream (softened)
- 1 cup caramel sauce (store-bought or homemade)
- 1 cup whipped cream (for topping)
- to taste chocolate shavings or cocoa powder (for garnish)
Instructions
- Start by preheating your oven to 350°F (175°C) if you're making a homemade crust.
- If using a store-bought crust, skip this step and go straight to the next one!
- In a mixing bowl, combine crushed chocolate cookies and melted butter to form your crust.
- Press the mixture into a pie dish evenly and bake for 10 minutes. Once done, let it cool.
- While the crust cools, in another bowl, soften the coffee ice cream for about 10 minutes until it’s easier to work with.
- Spread half of the caramel sauce onto the cooled crust.
- Next, gently spoon the softened coffee ice cream into the crust and smooth the top.
- Add the remaining caramel sauce on top of the ice cream.
- Cover the pie with plastic wrap and freeze for at least 4 hours or until firm.
- Before serving, top with whipped cream and garnish with chocolate shavings or cocoa powder.
