Instructions
- Peel and dice the apples, removing any seeds.
- In a large pot, combine apples, apple cider, lemon juice, and vanilla; cook until apples soften.
- Add granulated sugar, brown sugar, and cinnamon; stir until dissolved.
- Incorporate fruit pectin, bring to a boil, and cook for 5 minutes while stirring.
- Pour the hot jam into sterilized jars, seal tightly, and process in a hot water bath if desired.
