- 4 breasts boneless, skinless chicken
- 1 cup fresh mozzarella cheese, sliced or cubed
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil leaves
- 2 tablespoons balsamic glaze
- 2 tablespoons olive oil
- 1 teaspoon garlic powder

Instructions
- Preheat your oven to 375°F (190°C).
- Butterfly the chicken breasts by slicing them in half horizontally, creating a pocket for the stuffing.
- In a medium bowl, mix together the mozzarella, cherry tomatoes, basil, and balsamic glaze.
- Stuff each chicken breast with the mozzarella mixture, then secure with toothpicks if needed.
- Drizzle olive oil over the chicken and season with garlic powder, salt, and pepper.
- Place the stuffed chicken in a baking dish and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Remove the toothpicks before serving, and drizzle with extra balsamic glaze if desired.
