- 8 oz pasta (fusilli or penne works great)
- 1 cup cherry tomatoes (halved)
- 8 oz fresh mozzarella balls (halved)
- 1/2 cup fresh basil leaves (roughly chopped)
- 1/4 cup extra virgin olive oil
- 2 tbsp balsamic vinegar
- Salt and black pepper (to taste)
- 1/4 cup sliced black olives (optional)
- 1/4 cup grilled chicken (optional)
Instructions
- Start by cooking the pasta according to the package directions. Make sure to add a pinch of salt to the water for flavor. Drain and rinse under cold water to stop the cooking process, then set aside.
- In a large mixing bowl, combine the halved cherry tomatoes, mozzarella balls, and chopped basil. Toss them gently to mix.
- Add the cooled pasta to the bowl, followed by olive oil and balsamic vinegar. Season with salt and pepper to taste. Toss everything together until well combined.
- Let the salad sit for about 10 minutes to allow the flavors to meld. This step is crucial! The longer it sits, the better it tastes.
- Serve chilled or at room temperature. Enjoy!
