- 1 lb shrimp (peeled and deveined (fresh or frozen))
- 1 cup long-grain rice ((white or brown))
- 2 cups chicken or vegetable broth
- 1 medium onion (diced)
- 1 medium bell pepper (diced (any color))
- 3 cloves garlic (minced)
- 1 tbsp Cajun seasoning
- 1 tsp paprika
- 1 tbsp olive oil
- to taste salt
- to taste pepper
- to taste hot sauce (for serving)
- to taste green onions (for garnish)
Instructions
- In a medium saucepan, bring the chicken or vegetable broth to a boil. Add the rice, cover, and reduce heat to low.
- Let it simmer according to the rice package instructions (usually about 15-20 minutes for white rice and 40-45 for brown rice).
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, cooking until they’re tender – about 5 minutes.
- Stir in the minced garlic and cook for an additional minute, until fragrant.
- Add the shrimp to the skillet, followed by the Cajun seasoning, paprika, salt, and pepper.
- Cook until the shrimp are pink and opaque, about 3-4 minutes.
- Once the rice is done, fluff it with a fork and add it to the skillet with the shrimp mixture.
- Stir until everything is well combined. Taste and adjust seasonings if necessary.
- Serve the Cajun shrimp rice bowl hot, garnished with chopped green onions and a splash of hot sauce if you like it spicy!
