  • 1 lb shrimp (peeled and deveined (fresh or frozen))
  • 1 cup long-grain rice ((white or brown))
  • 2 cups chicken or vegetable broth
  • 1 medium onion (diced)
  • 1 medium bell pepper (diced (any color))
  • 3 cloves garlic (minced)
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • 1 tbsp olive oil
  • to taste salt
  • to taste pepper
  • to taste hot sauce (for serving)
  • to taste green onions (for garnish)

Instructions

  • In a medium saucepan, bring the chicken or vegetable broth to a boil. Add the rice, cover, and reduce heat to low.
  • Let it simmer according to the rice package instructions (usually about 15-20 minutes for white rice and 40-45 for brown rice).
  • Meanwhile, heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, cooking until they’re tender – about 5 minutes.
  • Stir in the minced garlic and cook for an additional minute, until fragrant.
  • Add the shrimp to the skillet, followed by the Cajun seasoning, paprika, salt, and pepper.
  • Cook until the shrimp are pink and opaque, about 3-4 minutes.
  • Once the rice is done, fluff it with a fork and add it to the skillet with the shrimp mixture.
  • Stir until everything is well combined. Taste and adjust seasonings if necessary.
  • Serve the Cajun shrimp rice bowl hot, garnished with chopped green onions and a splash of hot sauce if you like it spicy!
