- 1 pound large shrimp (peeled and deveined)
- 1 cup uncooked rice (white or brown)
- 1 tablespoon Cajun seasoning (store-bought or homemade)
- 1 bell pepper (diced, any color)
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 2 tablespoons olive oil
- Salt and pepper (to taste)
- 2 green onions (sliced for garnish)
- 1 lemon wedges (for serving)
Instructions
- Start by cooking your rice according to package instructions. Use a rice cooker or stovetop for perfectly fluffy rice.
- While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, sautéing until they’re softened.
- Add the minced garlic and sauté for another minute until fragrant.
- Now, toss in the shrimp and Cajun seasoning. Stir well to coat the shrimp evenly. Cook for about 5-7 minutes.
- Once the rice is cooked, fluff it with a fork and divide it among bowls.
- Top each bowl with the sautéed shrimp and veggies. Garnish with sliced green onions and serve with lemon wedges.
