- 2 pounds of potatoes, peeled and diced

- 1 bell pepper, diced (preferably green)
- 4 cups of vegetable or chicken broth
- 1 cup of heavy cream
- 2 tablespoons of Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons of olive oil
- Chopped green onions for garnish
Instructions
- Sauté the onion, bell pepper, and garlic in olive oil until tender.
- Add diced potatoes and broth, bring to a boil, then simmer until potatoes are tender.
- Blend the soup to your desired consistency.
- Stir in cream and Cajun seasoning, adjust seasoning, and simmer for 5 more minutes.
- Serve in bowls and garnish with chopped green onions.
