A delicious Cajun Pastalaya featuring smoked sausage, chicken, and pasta, infused with bold flavors.

Ingredients

Scale
  • 1 pound of pasta (penne or fusilli works best)
  • 1 pound of smoked sausage, sliced
  • 1 pound of chicken breast, diced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves of garlic, minced
  • 1 can (14.5 oz) of diced tomatoes
  • 4 cups of chicken broth
  • 2 tablespoons of Cajun seasoning
  • 1 teaspoon of thyme
  • 1 teaspoon of black pepper
  • Salt to taste
  • 2 tablespoons of olive oil
  • Chopped green onions for garnish

Instructions

  1. Gather and prepare all ingredients: chop onion, bell pepper, and garlic; slice sausage and dice chicken.
  2. In a pot, heat olive oil, sauté sausage and chicken until cooked, then set aside.
  3. Add onion, bell pepper, and garlic to the pot; sauté until soft.
  4. Return meat to the pot and add tomatoes, broth, Cajun seasoning, thyme, black pepper, and salt; bring to a boil.
  5. Add pasta, reduce heat, cover, and simmer until pasta is al dente, stirring occasionally.
  6. Remove from heat, let sit briefly, then garnish with green onions before serving.
