Ingredients

- 1 pound of pasta (penne or fusilli works best)
- 1 pound of smoked sausage, sliced
- 1 pound of chicken breast, diced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves of garlic, minced
- 1 can (14.5 oz) of diced tomatoes
- 4 cups of chicken broth
- 2 tablespoons of Cajun seasoning
- 1 teaspoon of thyme
- 1 teaspoon of black pepper
- Salt to taste
- 2 tablespoons of olive oil
- Chopped green onions for garnish
Instructions
- Gather and prepare all ingredients: chop onion, bell pepper, and garlic; slice sausage and dice chicken.
- In a pot, heat olive oil, sauté sausage and chicken until cooked, then set aside.
- Add onion, bell pepper, and garlic to the pot; sauté until soft.
- Return meat to the pot and add tomatoes, broth, Cajun seasoning, thyme, black pepper, and salt; bring to a boil.
- Add pasta, reduce heat, cover, and simmer until pasta is al dente, stirring occasionally.
- Remove from heat, let sit briefly, then garnish with green onions before serving.
Notes
- Feel free to adjust the spices to suit your taste.
- Leftovers can be stored in the refrigerator for up to 3 days.
