- 1 pound large shrimp (peeled and deveined)
- 2 tablespoons olive oil
- 2 tablespoons Cajun seasoning
- 8 small corn or flour tortillas
- 1 cup shredded cabbage
- 1 avocado sliced
- 1/2 cup pico de gallo
- fresh cilantro for garnish
- lime wedge for serving
Instructions
- Start by marinating the shrimp. In a bowl, combine the shrimp, olive oil, and Cajun seasoning. Toss until the shrimp are well coated. Let them marinate for about 15 minutes.
- Preheat your grill to medium-high heat. If you’re using a grill pan, heat it over medium heat on the stove.
- Once hot, arrange the shrimp on the grill. Grill for about 2-3 minutes on each side, until they are opaque and cooked through. Remove from the grill.
- Warm the tortillas on the grill for about 30 seconds on each side until they’re soft and pliable.
- Now it’s time to assemble! On each tortilla, layer the grilled shrimp, shredded cabbage, avocado slices, and pico de gallo.
- Top with fresh cilantro and a squeeze of lime juice. Serve immediately and enjoy!
