- 1 pound shrimp (peeled and deveined)
- 2 tablespoons olive oil
- 4 cloves garlic (minced)
- 1 tablespoon Cajun seasoning
- 1 cup bell peppers (sliced (any color))
- 1 cup zucchini (sliced)
- 1 teaspoon lemon juice
- to taste Salt and pepper
- to taste Fresh parsley (for garnish)
Instructions
- Preheat your grill or oven to medium-high heat (about 400°F).
- In a large bowl, combine shrimp, olive oil, garlic, Cajun seasoning, bell peppers, zucchini, lemon juice, salt, and pepper. Mix well until everything is coated.
- Cut out four sheets of heavy-duty aluminum foil, about 12 inches long each.
- Evenly divide the shrimp and vegetable mixture onto the center of each foil sheet.
- Fold the foil over the mixture, sealing the edges tightly to create packets.
- Place the packets on the grill or in the oven. Cook for about 10-12 minutes, or until the shrimp turn pink and opaque.
- Carefully open the packets (watch out for steam!) and garnish with fresh parsley before serving.
