  • 1 pound shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 tablespoon Cajun seasoning
  • 1 cup bell peppers (sliced (any color))
  • 1 cup zucchini (sliced)
  • 1 teaspoon lemon juice
  • to taste Salt and pepper
  • to taste Fresh parsley (for garnish)

Instructions

  • Preheat your grill or oven to medium-high heat (about 400°F).
  • In a large bowl, combine shrimp, olive oil, garlic, Cajun seasoning, bell peppers, zucchini, lemon juice, salt, and pepper. Mix well until everything is coated.
  • Cut out four sheets of heavy-duty aluminum foil, about 12 inches long each.
  • Evenly divide the shrimp and vegetable mixture onto the center of each foil sheet.
  • Fold the foil over the mixture, sealing the edges tightly to create packets.
  • Place the packets on the grill or in the oven. Cook for about 10-12 minutes, or until the shrimp turn pink and opaque.
  • Carefully open the packets (watch out for steam!) and garnish with fresh parsley before serving.
