- 1 pound chicken breast (diced)
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 medium onion (chopped)
- 1 medium bell pepper (chopped (any color))
- 2 cloves garlic (minced)
- 1 can (10 oz) diced tomatoes (with green chilies)
- 1 tablespoon Cajun seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheddar cheese (optional)
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add onion and bell pepper, cooking until soft, about 5 minutes.
- Add garlic and diced chicken to the skillet. Cook until the chicken is browned on all sides, around 7-8 minutes.
- Stir in the rice, chicken broth, diced tomatoes, Cajun seasoning, salt, and black pepper. Bring to a simmer.
- Transfer the mixture to a greased 9×13 inch baking dish. Cover with foil.
- Bake for 25 minutes. Remove the foil, sprinkle cheese on top if using, and bake for an additional 10-15 minutes, until the rice is cooked and the cheese is melted.
- Let it cool for a few minutes before serving. Enjoy!
