  • 1 pound chicken breast (diced)
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 medium onion (chopped)
  • 1 medium bell pepper (chopped (any color))
  • 2 cloves garlic (minced)
  • 1 can (10 oz) diced tomatoes (with green chilies)
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese (optional)
  • 2 tablespoons olive oil

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add onion and bell pepper, cooking until soft, about 5 minutes.
  • Add garlic and diced chicken to the skillet. Cook until the chicken is browned on all sides, around 7-8 minutes.
  • Stir in the rice, chicken broth, diced tomatoes, Cajun seasoning, salt, and black pepper. Bring to a simmer.
  • Transfer the mixture to a greased 9×13 inch baking dish. Cover with foil.
  • Bake for 25 minutes. Remove the foil, sprinkle cheese on top if using, and bake for an additional 10-15 minutes, until the rice is cooked and the cheese is melted.
  • Let it cool for a few minutes before serving. Enjoy!
