- 8 oz penne pasta
- 2 pieces boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
- 1 tablespoon Cajun seasoning (adjust to taste)
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Optional: red pepper flakes for extra heat
Instructions
- Start by cooking the penne pasta according to package instructions until al dente. Drain and set aside.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Season the chicken pieces with Cajun seasoning, salt, and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 6-8 minutes.
- Once the chicken is cooked, lower the heat to medium-low and pour in the heavy cream. Stir to combine, letting it simmer for 2-3 minutes.
- Add the cooked penne to the skillet and toss everything together until the pasta is well coated in the creamy sauce.
- Sprinkle the mozzarella and Parmesan cheese over the pasta, mixing until the cheese is melted and everything is combined.
- Serve immediately, garnished with fresh parsley and extra red pepper flakes if desired. Enjoy!
