  • 2 cups cooked pasta (penne or rigatoni)
  • 2 tablespoons olive oil
  • 1 pound chicken breast (diced)
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon butter
  • 3 cloves garlic (minced)
  • Salt and pepper (to taste)
  • Chopped parsley (for garnish)

Instructions

  • Preheat your oven to 375°F (190°C).
  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add diced chicken, sprinkle with Cajun seasoning, and cook until browned and cooked through.
  • Remove the chicken from the skillet and set aside. In the same skillet, add butter and minced garlic. Sauté for about 1 minute until fragrant.
  • Pour in the heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth.
  • Add the cooked pasta and chicken back into the skillet. Toss everything together until evenly coated with the sauce.
  • Transfer the mixture into a baking dish, sprinkle with mozzarella cheese, and bake in the preheated oven for 15-20 minutes until the cheese is bubbly and golden.
  • Garnish with chopped parsley before serving.
