- 2 cups cooked pasta (penne or rigatoni)
- 2 tablespoons olive oil
- 1 pound chicken breast (diced)
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 tablespoon butter
- 3 cloves garlic (minced)
- Salt and pepper (to taste)
- Chopped parsley (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced chicken, sprinkle with Cajun seasoning, and cook until browned and cooked through.
- Remove the chicken from the skillet and set aside. In the same skillet, add butter and minced garlic. Sauté for about 1 minute until fragrant.
- Pour in the heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth.
- Add the cooked pasta and chicken back into the skillet. Toss everything together until evenly coated with the sauce.
- Transfer the mixture into a baking dish, sprinkle with mozzarella cheese, and bake in the preheated oven for 15-20 minutes until the cheese is bubbly and golden.
- Garnish with chopped parsley before serving.
