Quick and delicious buffalo white bean tacos, perfect for a weeknight meal!

  • 2 cans white beans ((like cannellini or navy), drained and rinsed)
  • 1/2 cup buffalo sauce ((adjust to your spice preference))
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup crumbled feta or blue cheese (optional)
  • to taste Fresh cilantro (for garnish, optional)

Instructions

  • In a medium-sized skillet, heat olive oil over medium heat.
  • Add the drained white beans and mash them with a fork or a potato masher until smooth but still chunky.
  • Stir in the buffalo sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for about 5 minutes, stirring occasionally until everything is heated through.
  • While the filling is cooking, warm the tortillas in a separate skillet over low heat for about 30 seconds on each side.
  • Assemble the tacos by placing a generous spoonful of the buffalo white bean mixture onto each tortilla.
  • Top with shredded lettuce, diced tomatoes, and cheese if using.
  • Garnish with fresh cilantro and serve immediately.
