- 2 cans white beans ((like cannellini or navy), drained and rinsed)
- 1/2 cup buffalo sauce ((adjust to your spice preference))
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- to taste Salt and pepper
- 8 small corn or flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup crumbled feta or blue cheese (optional)
- to taste Fresh cilantro (for garnish, optional)
Instructions
- In a medium-sized skillet, heat olive oil over medium heat.
- Add the drained white beans and mash them with a fork or a potato masher until smooth but still chunky.
- Stir in the buffalo sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for about 5 minutes, stirring occasionally until everything is heated through.
- While the filling is cooking, warm the tortillas in a separate skillet over low heat for about 30 seconds on each side.
- Assemble the tacos by placing a generous spoonful of the buffalo white bean mixture onto each tortilla.
- Top with shredded lettuce, diced tomatoes, and cheese if using.
- Garnish with fresh cilantro and serve immediately.
