- 4 medium sweet potatoes
- 2 cups cooked shredded chicken (rotisserie works great!)
- 1/2 cup buffalo sauce (your favorite brand)
- 1/2 cup shredded cheddar cheese
- 1/4 cup blue cheese (optional)
- 1/4 cup green onions (sliced)
- 1 tablespoon olive oil
- Salt and pepper (to taste)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce each sweet potato with a fork a few times.
- Rub the sweet potatoes with olive oil and sprinkle with salt and pepper.
- Bake the sweet potatoes for about 45-50 minutes, or until they’re tender.
- Mix the shredded chicken and buffalo sauce in a bowl.
- Slice the sweet potatoes down the middle and fluff the insides.
- Fill the sweet potatoes with the buffalo chicken mixture.
- Top with cheddar cheese and optional toppings.
- Return to the oven for 5-10 minutes to melt the cheese.
- Serve hot and enjoy!
