  • 4 medium sweet potatoes
  • 2 cups cooked shredded chicken (rotisserie works great!)
  • 1/2 cup buffalo sauce (your favorite brand)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup blue cheese (optional)
  • 1/4 cup green onions (sliced)
  • 1 tablespoon olive oil
  • Salt and pepper (to taste)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and pierce each sweet potato with a fork a few times.
  • Rub the sweet potatoes with olive oil and sprinkle with salt and pepper.
  • Bake the sweet potatoes for about 45-50 minutes, or until they’re tender.
  • Mix the shredded chicken and buffalo sauce in a bowl.
  • Slice the sweet potatoes down the middle and fluff the insides.
  • Fill the sweet potatoes with the buffalo chicken mixture.
  • Top with cheddar cheese and optional toppings.
  • Return to the oven for 5-10 minutes to melt the cheese.
  • Serve hot and enjoy!
