- 2 whole ripe avocados
- 2 cups shredded cooked chicken
- 1/2 cup Buffalo sauce
- 1/4 cup cream cheese, softened
- 1/4 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- Optional toppings: blue cheese crumbles, cilantro, ranch dressing
Instructions
- Preheat your oven to 350°F (175°C) if you want melted cheese on top.
- In a mixing bowl, combine shredded chicken, Buffalo sauce, cream cheese, and half of the cheddar cheese.
- Slice the avocados in half and remove the pit. Scoop out a little flesh to create room for the filling.
- Stuff each avocado half with the Buffalo chicken mixture.
- Place stuffed avocados on a baking sheet and sprinkle with remaining cheddar cheese. Bake for 10-15 minutes.
- Remove from oven and cool slightly. Top with green onions and any other desired toppings.
- Serve warm and enjoy your delicious stuffed avocados!
