A delicious and easy dish combining creamy avocados with spicy Buffalo chicken for a healthy meal!

  • 2 whole ripe avocados
  • 2 cups shredded cooked chicken
  • 1/2 cup Buffalo sauce
  • 1/4 cup cream cheese, softened
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • Optional toppings: blue cheese crumbles, cilantro, ranch dressing

Instructions

  • Preheat your oven to 350°F (175°C) if you want melted cheese on top.
  • In a mixing bowl, combine shredded chicken, Buffalo sauce, cream cheese, and half of the cheddar cheese.
  • Slice the avocados in half and remove the pit. Scoop out a little flesh to create room for the filling.
  • Stuff each avocado half with the Buffalo chicken mixture.
  • Place stuffed avocados on a baking sheet and sprinkle with remaining cheddar cheese. Bake for 10-15 minutes.
  • Remove from oven and cool slightly. Top with green onions and any other desired toppings.
  • Serve warm and enjoy your delicious stuffed avocados!
