- 2 cups cooked rice
- 1 pound chicken breast, diced
- 1/2 cup Buffalo sauce
- 1 tablespoon olive oil
- 1 cup corn
- 1 cup black beans, rinsed and drained
- 1/2 cup diced tomatoes
- 1/4 cup chopped green onions
- 1/2 cup shredded cheese
- to taste Salt and pepper
- to taste Ranch or blue cheese dressing (optional)
Instructions
- In a skillet over medium heat, add olive oil.
- Once hot, add the diced chicken. Season with salt and pepper. Cook for about 5-7 minutes, until browned and cooked through.
- Pour in the Buffalo sauce and stir to coat the chicken. Let it simmer for 2-3 minutes.
- While the chicken simmers, prepare your rice according to package instructions, if not already cooked.
- In a serving bowl, layer rice, then spoon the Buffalo chicken on top.
- Add corn, black beans, tomatoes, and top with cheese and green onions.
- Drizzle with ranch or blue cheese dressing, if desired.
- Serve warm and enjoy!
