  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 1/2 cup Buffalo sauce
  • 1 tablespoon olive oil
  • 1 cup corn
  • 1 cup black beans, rinsed and drained
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/2 cup shredded cheese
  • to taste Salt and pepper
  • to taste Ranch or blue cheese dressing (optional)

Instructions

  • In a skillet over medium heat, add olive oil.
  • Once hot, add the diced chicken. Season with salt and pepper. Cook for about 5-7 minutes, until browned and cooked through.
  • Pour in the Buffalo sauce and stir to coat the chicken. Let it simmer for 2-3 minutes.
  • While the chicken simmers, prepare your rice according to package instructions, if not already cooked.
  • In a serving bowl, layer rice, then spoon the Buffalo chicken on top.
  • Add corn, black beans, tomatoes, and top with cheese and green onions.
  • Drizzle with ranch or blue cheese dressing, if desired.
