- 8 oz pasta ((spaghetti, penne, or your favorite))
- 2 pieces boneless, skinless chicken breasts
- 1 cup cherry tomatoes (halved)
- 1/2 cup fresh basil (chopped)
- 2 cloves garlic (minced)
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- Salt and pepper (to taste)
- Parmesan cheese (for serving)
Instructions
- Start by cooking the pasta according to package instructions. Make sure to salt the water for flavor. It usually takes about 8-10 minutes.
- While the pasta cooks, heat a large skillet over medium-high heat. Season the chicken breasts with salt and pepper.
- Add a tablespoon of olive oil to the skillet and cook the chicken for about 6-7 minutes per side, or until it’s golden and cooked through. Remove from the skillet and let it rest.
- In the same skillet, add a little more olive oil if needed and toss in the minced garlic. Sauté for about 30 seconds until fragrant.
- Add the cherry tomatoes and balsamic vinegar. Cook for about 3-4 minutes until the tomatoes soften.
- While the tomatoes are cooking, slice the chicken into strips.
- Once the pasta is done, drain it and add it to the skillet with the tomatoes. Toss everything together, adding the sliced chicken and chopped basil.
- Serve it hot, topped with freshly grated Parmesan cheese.
