  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup fruit preserves or chocolate spread (your choice)
  • 1 egg for egg wash
  • 1 cup sprinkles (optional, for decoration)

Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Add the egg and vanilla extract, mixing until well combined.
  • In another bowl, whisk together the flour, baking powder, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Take a small amount of dough and roll it out on a floured surface to about 1/4 inch thick.
  • Cut out rectangles, and place half of them on the prepared baking sheet.
  • Place about a teaspoon of your chosen filling in the center of each rectangle.
  • Top each filled rectangle with another rectangle of dough and seal the edges with a fork.
  • Brush the tops with an egg wash and sprinkle with additional sugar or sprinkles if desired.
  • Bake for 15-18 minutes or until golden brown. Let them cool before enjoying!
