  • 1 cup of fresh pineapple chunks (or canned, if you prefer)
  • 1/2 cup of brown sugar
  • 1/4 cup of soy sauce
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1 teaspoon of ground ginger
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Combine soy sauce, brown sugar, olive oil, garlic, and ginger in a bowl to create a marinade. Add chicken and coat well; marinate for at least 30 minutes.
  2. Preheat your oven to 375°F (190°C).
  3. Prepare pineapple by chopping fresh or draining canned pineapple.
  4. Place marinated chicken in a baking dish, pour remaining marinade over it, and top with pineapple. Bake for 20-25 minutes until chicken reaches 165°F (75°C).
  5. Let chicken rest, slice, drizzle with sauce, and garnish with green onions before serving.
