  • 1 cup unsalted butter
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup toffee bits (or crushed toffee bars)
  • 1 cup chocolate chips (optional)

Instructions

  • Preheat your oven to 350°F (175°C) and grease a muffin tin.
  • In a saucepan, melt the butter over medium heat. Stir continuously until it turns golden brown and smells nutty, about 5-7 minutes.
  • Remove from heat and let it cool slightly. In a large bowl, mix the brown butter with brown sugar and granulated sugar until smooth.
  • Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture until combined.
  • Fold in the toffee bits and chocolate chips (if using).
  • Using a cookie scoop, place the dough into the prepared muffin tin, filling each cup about halfway.
  • Bake for 12-15 minutes or until the edges are golden. Let them cool for a few minutes before removing from the tin.
